Créé il y a un an dans le but de faire revivre les traditions libanaises d’antan, el-Estez est un concept de sandwicherie libanaise divisée en plusieurs stations. On y trouve des shawarmas, sandwiches, burgers ou grillades pour un prix moyen autour de cinq dollars le sandwich. « Le but est de moderniser un peu les recettes classiques. Nous utilisons des ingrédients frais que nous marinons chaque jour et nous servons en moyenne 30 à 40 personnes par heure qui mangent sur le pouce ou prennent à emporter, » explique Amal Khlat, copropriétaire et gérante du restaurant, qui affirme que la livraison reste son premier marché. El-Estez compte aujourd’hui deux emplacements pour un investissement total d’environ 400 000 dollars : un premier à Furn el-Chebback où se situe toujours la cuisine principale et un petit point de vente de 25 m2 à Sodeco en lieu et place de l’ancien JuiceUp. D’ici à la fin de l’année, une troisième boutique devrait ouvrir à Mar Mikhaël. El-Estez propose aussi un service de traiteur en déplaçant ses stations pour des événements privés.
